Tea-Scented Mandarins

4 servings

* 2 cups mandarin orange or clementine segments

* 1/2 cup hot black tea

* 2 tablespoons honey

* Pinch of ground cardamom

1. Place orange (or clementine) segments in a small bowl. Pour tea over them and drizzle with honey and sprinkle with cardamom.

Grape and Melon Salad

  • 1 cantaloupe, peeled, seeded, and cut into cubes or balls
  • 2 cups red grapes
  • 1/4 cup vanilla yogurt
  • 1/4 cup pineapple-orange juice
  • 1/2 teaspoon dried basil leaves


Combine cantaloupe cubes and grapes in large bowl. In small bowl, mix together yogurt, juice, and basil and stir to blend. Pour over fruit, stir gently, and refrigerate for 1-2 hours before serving, or serve immediately.

Baked Custard

  • 3 eggs, beaten
  • 1/4 cup sugar
  • 1/8 tsp. salt
  • 1 tsp. vanilla
  • 2-1/2 cups whole milk (NOT skim)


Preheat oven to 350 degrees. In large bowl, mix together eggs, sugar, salt and vanilla until well blended. Add milk and mix with a wire whisk until smooth. Pour into six 6-oz. custard cups.Place cups in 13×9″ pan and place in oven. Fill pan around the cups with about 1″ of water, being careful to not splash any water into the custard cups. Bake at 350 degrees for 45-55 minutes or until a knife inserted near the center comes out clean. Serve warm or cold. Store leftovers in refrigerator. 6 servings

Cantaloupe, Strawberry and Green Tea Soup

  • 1 1/2 cups ripe cold cantaloupe, cut into 1-inch chunks
  • 1 cup ripe strawberries, hulled
  • 1/2 cup cold brewed unsweetened green tea
  • 8 fresh blackberries or small strawberries, for garnish
  • 4 tiny mint sprigs, for garnish)


In a blender, pure cantaloupe and strawberries. With blender running, add tea through feed tube and process until smooth. Evenly divide soup in shallow bowls. Add 2 blackberries or strawberries in center of each bowl and place mint sprig between the berries for garnish.
